`Blue` – Alain Ducasse in Bangkok

What is it ?  –  A modern Contemporary fine dining Restaurant bearing the name of the World famous superchef Alain Ducasse. The restaurant is situated inside the luxurious `Icon Siam` shopping mall with stunning views overlooking the iconic Chao Phraya river.

What`s Cooking ?  – Very much Classical French cuisine with a modern approach and a few Asian influences.

Who`s Cooking ?  Chef Wilfrid Hocquet – The man is just amazing but there again I would say that because he`s cooking exactly what I want to eat. Gimmick free dishes using luxurious ingredients cooked to perfection with superb well-honed kitchen skills. Chef Wilfrid Hocquet comes with experience from one of the world’s greatest Restaurants – The 3 Michelin starred ‘Le Louis XV by Alain Ducasse in Monaco.

What should I expect ?  A fine dining experience with food as good as you`re going to eat anywhere in the World. Fabulous Wines , perfect service and stunning views….Everything is good here.

Must Order dish  – The Rum Baba is a Ducasse classic and available off the ALC menu. It`s definitely well worth ordering as an extra if you have the set lunch.

What will it cost me ?  5 course lunch for 2550 baht ($70/£60) or go A la carte if you prefer some Ducasse classics. If you`re wanting the bargain of Bangkok then do the set 5 course lunch (which ends up about 9 courses). We went for the drinks package with a glass of Champagne , unlimited bottled water , 2 glasses of decent wine and Coffee/Tea for 1650 baht. ($45/£39)

My thoughts –  What an amazing opportunity to experience the cuisine of Alain Ducasse without paying the huge prices you`d pay if you visited the other 3 Michelin star restaurants of the Ducasse empire. I counted up 9 courses for my lunch for the amazing price of 2550 Baht. ($70/£60) With the highest standards of service and one of the best views in Bangkok I honestly don`t believe there`s a better high end Michelin fine dining bargain to be had anywhere like this in the city….I`m amazed. One course at Ducasse in Monte Carlo will set the diner back 6,500 baht ($178/£154) so just put that into perspective and go and experience for yourselves before the prices creep up when they undoubtedly move to 2 star and then quite possibly 3. The cooking really is at that level already.

You`ll get everything here and more if you choose the set lunch.

What`s the Atmosphere like ? –  The Restaurant really isn`t the type of pompous place you might expect from an establishment bearing such a grand name in the fine dining world. It`s very relaxed and there was a few children amongst the guests. Lunch service is pretty laid back and relaxed and jeans / T-shirts seemed like the norm.

What`s good ?  –  The service flowed like a well rehearsed show , totally flawless and professional. The front of house team was headed up by Restaurant Manager Alex Cufley from the U.K. Alex brought his knowledge and skills from his previous posts at Ducasse Paris , Hong kong , Macau and Tokyo. A lovely guy and a guarantee that the diner will be well cared for.

What`s even better  ? – It`s a Vegan free zone. Fantastic to enjoy a meal without any whinging Tree huggers around. Blue does not cater for Vegans although vegetarian options are available for those that like eating a protein free diet.

Any Negatives Would I return ? –  I said I would after my last visit to Blue so i`ll now look forward to my 3rd  trip.

Foie gras Amuse 4 – Can Foie gras ever be anything other than amazing ?

Green Mango , Ginger , Galangal , Kiwi and Lemon juice with an infusion of Thai sweet Basil.– Really refreshing and a healthy kick to start the meal. Check out the kiwi ice sphere to keep the drink cool.

Oyster , Yuzu Emulsion and Cucumber , Apple Granite.

Soft Olive Oil Brioche with fresh herbs and fleur de sel.

Confit Chiang Mai Tomatoes and Buffalo Mozzarella with a Basil Granite and Black Olive Sable Biscuit.- Well selected produce here , the Tomatoes were packed full of amazing flavour….why can`t all Tomatoes be like this ?

Chanterelle Tortellini , Spinach and Black Garlic – The Chanterelle infused Consomme was superb. There really wasn`t any mistaking the concentrated Chanterelle mushroom flavour.

Steamed Skrei Cod , Trumpet Zucchini and Pomelo , Calamansi Sabayon.

Confit of 36 hour cooked Pork Belly , Roasted Apple , creamy Polenta and Pork/Cider jus.

The desserts arrive – Textures of Kiwi and Lemon Balm.

Mara des Bois Strawberry Contemporary Vacherin with lightly whipped Cream.

Classic Ducasse Rum Baba with Vanilla crème Chantilly – Simple perfection. This dessert is served throughout the Ducasse chain all over the World and consists of only the 2 elements , Sponge and cream. What elevates it to a whole different level is the addition of a shot of Rum. The Rums are all different at the various Ducasse Restaurants and at `Blue` the Rum comes from Chalong Bay on the isle of Phuket.
