AULIS Phuket – Worth a 6,000 mile journey ?

What is it ?  –  A 15 seat Chefs table experience at the stunning ultra luxury Iniala Beach house Hotel ,  Chef Simon Rogan`s first Restaurant in Thailand.

What`s Cooking ?  –  A showcase of Native Thai / Asian ingredients carefully selected from specialist farmers and growers.

Who`s Cooking ?  –  3 Michelin starred Chef Simon Rogan (L`Enclume) heads up the operation.Head Chef Giacomo Primante (ex Michelin 3 star Mirazur in Spain and 3 star L`Arpege , Paris) oversees Aulis in Simon`s absence.

What should I expect ? –   If you haven`t eaten Chefs table food before then you`re in for a treat.

Must Order dish  –  There`s only the one choice `Chefs table` menu available.

What will it cost me ?  Budget on roughly 28,000 Baht (£626 / $791) for the 14 course meal for 2 people with wine pairing and tax/service charge.

 14 Course Aulis “Chefs table” menu – 6,000 Baht++ ( £134/ $169 ) per person. A very reasonable price for such an exclusive private dining experience.

A Signature Wine pairing is available at –  5,500 baht (£122/$155)

My thoughts –  Aulis is quite isolated but a very reasonably priced 30 minute Taxi ride from Phuket town. The whole operation has just started here and so the kitchen team are currently getting to grips with new suppliers and working with a totally new set of ingredients.

Incorporating the classic sweet , salty , spicy , sour taste sensations of Thai food into Chef Rogan`s cuisine won`t be an easy one but they seem to be off to a great start here.

What`s the Atmosphere like ? –  I`ve never eaten at a Chefs table before so enjoyed watching the guys at work.

What`s good ? – Everything , it`s a luxurious experience from beginning to end.

Any Negatives ? / Would I return ? –  I`ve been to Asia 55 times now and always managed to avoid the islands because of my allergic intolerance to the idiotic topknot / Elephant trousered / `Cheap Charlie` western travellers. The only reason I flew to Phuket was to visit Chef Simon`s new restaurant. I was honoured to have reservation number 001. I spent 4 relaxing days at Natai beach resort and then 3 days in Phuket town. Chances are that I wont return to Phuket again after my reasons for never travelling there were confirmed x10. On the other hand my trip to the beach was very peaceful , relaxing and worth the effort just to eat at Aulis.

Truffle pudding caramelised in Banana Molasses , Black Garlic and Truffle.

Whey and Mangrove Honey Carrots , Potato pancake , fresh Goats Ricotta and toasted Cashews.

Blue Crab on Roasted Chicken skin , Avocado cream and fermented White Asparagus.

Sweet Jean Sweetcorn Custard , Clams and sea grapes , roasted Chicken bones and fats.

Raw South coast river Prawns , Sea Jelly and Bergamot. Caviar from Hua Hin smoked at home.

Phang Nga Squid , Lemon Thyme , Onion and Anise infused Broth.

Salad grilled over Embers , Green Peppercorn Custard , local Thalang district Garlic and Chilli oil , preserved Elderflower.

Day boat Coral Trout stuffed with Phetchabun Perilla , Tomato , Prawn and fermented Tea.

24 days aged Chiang Mai Wagyu striploin , Charred Aubergine , Anchovy and Mulberry Vinegar.

Frozen Chiang Mai Sheeps Yoghurt , aerated Lime, Cilantro and Kaffir Lime oil.

Nam Dok Mai Mango with Bee Pollen and Chamomile cake , iced Coconut , Cream infused with sweet herbs and Marigold.

Aulis Caramel Mousse with White Miso , Phuket Pineapple cooked with Aromats.

Eureka Lemon Meringue.

Tea and Coffee served at the end of dinner.

Our fabulous evening finished off with Fireworks on the Beach.

This is Natai Beach during the day – Clean , quiet and a fantastic place to escape to.
